Snow day cookies!

‘Snow day cookies’

These are a tasty chocolate chip/oaty cookie that perfectly accompanies a cup of hot chocolate on a cold day!

I made them today whilst the kiddies were playing in the back yard in the little bit of snow we have left! They came in doors with their rosy cheeks and snuggled up on the sofa; they gladly welcomed Mama’s ‘snow day cookies’ with their hot chocolate as we finished the last chapter of ‘Little House in the Big Woods’.

I think they are yummy, especially when still slightly warm – try them and let me know what you think!

8oz. Butter/marg
8oz Caster sugar
7.5 oz plain flour
1/2 tsp. Baking soda
5oz Oats
1 1/2 tsp. Vanilla essence
6 oz. chocolate chips

Cream butter and add sugar. Sift flour and baking soda. Mix in. Then add oats, vanilla and chocolate chips. Put dessert spoon sized dollops of the mixture on a greased baking tray and bake at 350 degrees/gas mark 4 for 15 minutes or until lightly browned.

I put about 8 on a normal sized baking tray, the mixture should make about 24 good sized cookies; enjoy!!

Oh yes, and by the way, just in case you were wondering; now we’ve finished ‘Little house in the big woods’ we’re going to take a short break from the ‘little house’ books and dig into a few of Irene Howat’s ‘light keepers’ books on men and women who have made a difference in the world.
