Nutritious flapjack fun!

The one’s that weren’t eaten…yet!

I am on a constant search for healthy, nutritious and easy to make snacks for my little ones; something to keep them going through the day which doubles up as a tasty treat for my hubby to come home to!

My precious friend Rebecca loaned me a book called ‘healthy cooking for your kids‘ which we’re eagerly working our way through; this recipe is one adapted from that book.

Flapjack is great due to the oat content but all that golden syrup is just too much for any adult never mind my kiddies; so here’s what we tried and tested today:

175g/6oz unsalted butter
3tbsp clear honey
150g/5.5 oz dark brown sugar
100g/3.5 oz no-added sugar smooth peanut butter

225g/8oz porridge oats
1tsp Cinnamon
50g/about 2oz ready-to-eat (no added sugar) apricots, chopped
2tbsp sunflower seeds
2tbsp sesame seeds

What to do:
Preheat the oven to 180 degs/gas mark 4. Grease and line a 22cm/8 1/2-inch square baking tin

Melt the butter, honey and sugar in a saucepan over a low heat. When the sugar has melted, add the peanut butter and stir until all the ingredients are well combined. Add all the remaining ingredients and mix well.

Press the mixture into the prepared time and bake in the preheated oven for 20 minutes.

Remove from the oven and leave to cool in the tin, then cut into 16 squares.

Put the kettle on, brew yourself a lovely cup of Yorkshire tea and put your feet up with cup in one hand and a piece of flapjack in the other (and in my case with a baby on your knee trying to steal it from you!!).
