Saturday Kitchen – Shaped Vanilla Pancakes

I’ve always wondered how our friends in the States make those fantastic fluffy pancakes that fill you up for a day (or at least till lunch time!), as appose to our thin puny ones we serve up on ‘Pancake day’!!

Well, in my endeavour to use up excess milk in my fridge I went on a search for a recipe and of course ‘tweaked’ it to suit my family…we had a bit of fun with the shapes too!

Here’s what we did:

Ingredients
270g/9.5oz plain flour
2 tsp baking powder
1 tsp salt
4 tbsp caster sugar
260ml/9fl oz milk
2 large eggs, lightly beaten
3tsp vanilla extract
4 tbsp melted butter (allowed to cool slightly) or olive oil, plus extra for cooking

How-to
1. Sift the flour, baking powder, salt and caster sugar into a large bowl. In a separate bowl or jug, lightly whisk together the milk, egg and vanilla extract, then whisk in the melted butter.

2. Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Any lumps will soon disappear with a little mixing. Let the batter stand for a few minutes.

3. Heat a non-stick frying pan over a medium heat and add a knob of butter. When it’s melted, add a ladle of batter (or two if your frying pan is big enough to cook two pancakes at the same time). It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm (½in) thick.

As you can see from our photo we experimented with a cookie cutter in the pan and pouring the mixture in – this only works if your cutter has a handle that you can lift as the bubbles start to appear; I did try other smaller cutters but it didn’t work as well. The kids LOVED their ‘pancake men’ and it would make a great dessert with ice cream for a kids party or special birthday breakfast.

4. Serve with lashings of anything that takes your fancy!

This was the ‘grown up’ version topped with strawberry yogurt!
