Fat Fairy Cakes!

There’s nothing quite like a good English fairy cake with a cup of tea!  I don’t know about you though but they never seem quite big enough; my hubby (the rest of us) are always reaching for a second (or third…)! So now I make ‘Fat Fairy Cakes’; easy, delicious, quick to whip up if a girl friend is popping in for a cuppa and the kids can make them too!

You can jazz them up with any kind of icing or frosting you like, one of my favourites is making a basic butter icing and throwing in zest from one lemon – Yum!

So here goes, I’ve got some in my oven as I type

8oz (200g) self-raising flour
8oz (200g) butter or margarine
8oz (200g) sugar
4 eggs beaten


  1. Cream the butter and the sugar in a large mixing bowl until pale and fluffy
  2. Gradually add the beaten egg to the mixture a bit at a time
  3. Fold in the flour with a large spoon
  4. Spoon the mixture into 12 muffin cases; pile it in – we want big fat fairy cakes!
  5. Bake in oven on gas mark 5 (190 c) for about 20 – 25 mins; the cakes should be a light golden brown colour and springy to touch!
When they’ve cooled you can to go town on the icing!
Basic butter icing:
1 part butter to 3 parts icing sugar – mix together with a little milk or water till light and creamy
Add a bit of lemon or orange zest, some cocoa powder or even food colouring for a fun tasty treat!
…now to go check on mine (make sure no one has had a little ‘tester’ cake!)
